Snap Pea Salad with Sesame Dressing

- 10 peas snap peas

- 10 ml soy souce
- 5 g sugar
- 30 g white sesame seeds

【Preparation of Ingredients】
- Snap peas should have their strings removed. There are two strings, one on each side, so peeling both from the tips will allow for easy removal.
- Add 5g of salt to 1 liter of boiling water and cook the snap peas for 1 minute.
- Drain the snap peas in a colander and let them cool for a while. Do not soak them in water, as it will make them watery.
- Grind the sesame seeds in a mortar and pestle until about half of the seeds are crushed.
Notes
- Freshly ground white sesame seeds have the best aroma, but you can also use pre-ground sesame seeds.
- Mix just before serving for the best taste, as it becomes watery if it sits for too long.
